GREEK SUNDRIED TOMATO

Sundried tomatoes are a food which consists of normal, ripe tomatoes or of dry tomatoes which get sundried so that all the water they contain can evaporate. Cherry tomatoes lose 88% of their weight after drying out, while bigger tomatoes lose 93%. To produce one kilo of sundried tomatoes, 14 kilos of fresh tomatoes are needed. Sundried tomatoes have the same nutritional value as fresh ones, that is, they are rich in lycopene, antioxidants and vitamin C. Sundried tomatoes can be found in a great variety of colors, sizes and tastes. Traditionally they are served with olive oil, rosemary, basil and garlic.
